Ingredients (yield 2 cups):
- Couscous½ c
- Water1 c
- Salt¼ tsp
- Carrot (grated)2 Tbl
- Edamame (shelled) 2 Tbl
- Dried cranberries2 Tbl
- Almonds (sliced)2 Tbl
- Kaʻū Orange Vinaigrette Dressing3 Tbl
- Cilantro (chop fine)1½ tsp
- Mint (chop fine)1 tsp
- Saltto taste
- White Pepperto taste
- Combine couscous, water, and salt in a small sauce pot
- Bring to a boil and lower to a light simmer
- Cook 12-15 minutes or until couscous is cooked
- Remove from heat and let cool
- Combine all ingredients in a bowl and mix well
- Season to taste with salt and white pepper and serve
