Ingredients (yield 2 cups):

  • Couscous½ c
  • Water1 c
  • Salt¼ tsp
  • Carrot (grated)2 Tbl
  • Edamame (shelled) 2 Tbl
  • Dried cranberries2 Tbl
  • Almonds (sliced)2 Tbl
  • Kaʻū Orange Vinaigrette Dressing3 Tbl
  • Cilantro (chop fine)1½ tsp
  • Mint (chop fine)1 tsp
  • Saltto taste
  • White Pepperto taste
  • Procedure:

    • Combine couscous, water, and salt in a small sauce pot
    • Bring to a boil and lower to a light simmer
    • Cook 12-15 minutes or until couscous is cooked
    • Remove from heat and let cool
    • Combine all ingredients in a bowl and mix well
    • Season to taste with salt and white pepper and serve
