Ingredients (yield 2 cups):

Couscous ½ c
Water 1 c
Salt ¼ tsp

Carrot (grated) 2 Tbl
Edamame (shelled) 2 Tbl
Dried cranberries 2 Tbl
Almonds (sliced) 2 Tbl
Kaʻū Orange Vinaigrette Dressing 3 Tbl
Cilantro (chop fine) 1½ tsp
Mint (chop fine) 1 tsp

Salt to taste
White pepper to taste

Procedure:
Combine couscous, water, and salt in a small sauce pot
Bring to a boil and lower to a light simmer
Cook 12-15 minutes or until couscous is cooked
Remove from heat and let cool
Combine all ingredients in a bowl and mix well
Season to taste with salt and white pepper and serve
